Meet pepe marín, director of the sea wine club, and discover all of the secrets behind underwater ripening in the interview made in “miradas internacionales España”

Pepe Marín, born in Onil, in the province of Alicante, considers himself as passionate about sports, gastronomy, economics and business strategy. He began his career as a professional diver at the age of 18, which led him to travel and reside in various different locations in the Americas for several years.

It is during his stay abroad that the idea of creating a project that combines some of his hobbies with a large R&D project was born, giving rise, after more than 5 years of work together with the University of Alicante, to The Sea Wine Club, the first winery with a guaranteed underwater maturation process. Pepe informs us that the grapes are chosen from the vineyard with the underwater evolution in mind, allocating for this purpose only those most suitable for transformation in the depths of the Mediterranean Sea.
On what makes these wines different, Pepe Marín, the director of the winery, explains that the main secret lies in the constant movement and vibration that the sea currents bring to the bottles, which causes the particles of the wine to erode, producing a chemical change inside the bottles that brings new nuances, aromas and smoothness to the wine.
